Their Story

HICC is led by husband-and-wife team Tracey Apoliona-Youngstrom and Brightwell Youngstrom, whose island upbringings shape the heart of the business.

Tracey was raised on Molokaʻi, where food is deeply connected to family, land, and tradition. She brings over 20 years of experience in the hotel industry, along with professional work in human resources, workforce development, and community-based programming. Tracey ensures that HICC delivers a consistent, high-quality experience with strong values and professionalism.

Brightwell was raised in Kosrae, Federated States of Micronesia, where island living, fishing, and gathering around food are central to everyday life. His cooking style reflects Pacific Island flavors and a deep respect for traditional methods and ingredients. Bright's creativity, attention to detail, and love for feeding people are at the center of every menu HICC serves.

Together, Tracey and Bright have built a business that blends their cultures and values. Hawaiian and Micronesian. Into food that feels like home.
